Gems

Does it matter if you don't collect the gems?
Are they only for extra points for your score?

The only levels it matters on are the ones where you have to collect them all to finish the level, the wakka wakka ones for instance. There will normally be an extra icon at the top of the screen telling you how many gems there are to collect and the level won't end till you have them all.
The others are more for your satisfaction and extra points.
